
In this hands-on cooking class in Bologna, participants will learn to craft authentic tortellini from scratch. The class lasts three hours and is designed for a small group, limited to 8 people, allowing for an intimate experience. Attendees will engage in rolling dough and shaping tortellini by hand while discovering the techniques and traditions behind this traditional dish from Emilia-Romagna. The cooking class includes the preparation of an aperitivo featuring tigelle, mortadella, olives, Parmigiano Reggiano, and balsamic vinegar, followed by tortellini in brodo made with ham, mortadella, Parmigiano Reggiano, nutmeg, and meat broth. For dessert, participants will create classic tiramisù using mascarpone, espresso-soaked ladyfingers, and cocoa. Each group will receive one bottle of Pignoletto or Barbera for every two guests.
